Piacenza’s Food Valley is one of the most iportant Italian culinary scene, let’s find out which are the main traditional dishes that cannot be missing on the Christmas tables.
Typical cured meats and cheeses (Coppa, Salame, Pancetta and Grana Padano) are typical of every christmas table in Piacenza, and always have been.
But Piacenza’s MUSTs are of course the first courses: fresh pasta, strictly homemade.
First of all, the anolini in beef broth, similar of the Agnolotti, are a real specialty.
Anolini have very ancient origins, whose recipe and secrets of preparation are handed down through generations. Traditionally, this very elaborate dish (fresh egg pasta filled with stewed meat, eggs, Grana Padano cheese and spices) is prepared on the occasion of the great holidays, first of all Christmas, and is always served with a bottle of Gutturnio wine DOC dei Colli Piacentini.
Gutturnio is a sparkling red wine with a bright red color, a vinous and fruity aroma, it preserves the local tradition in its taste and makes it a very pleasant and versatile wine. Excellent in combination with first courses, grilled meats and local dishes.
