Piacentina PDO certified Coppa Ham.
The coppa is the most famous salami of Piacenza, its origin is linked to the centuries-old family tradition handed down from generation to generation, where this salami was considered as one of the most valuable products, to be destined for consumption on holidays and for gifts of particular relief, such as marriages.
It is produced with meat from the neck of mature pigs, born and raised on farms in Emilia Romagna and Lombardy, as required by the strict European Union regulations governing PDO products.

The characteristic of the Coppa Piacentina PDO of Salumificio La Rocca is its sweetness, and it requires a limited percentage of salt, along with a skilful use of spices that must not overpower the scent given by the slow aging process.
The cut of meat, the cervical muscle of the pig, is dry covered with a mixture of salts and spices and left to rest in a cold environment. It is massaged to make the tanning penetrate and absorb well. This is followed by careful wrapping with natural pig skin: the traditional “lard skin.” The aging lasts for at least 6 months and takes place slowly in the cool cellars of our Salumificio.
How to enjoy it: remove the cup from the refrigerator about 30 minutes before consumption, to enhance its aroma. Subsequently, slice it very thin, with the help of a smooth blade knife or a slicer
