Italian Sweet Pancetta PDO Rolled: flavors of ancient tradition
Italian sweet Pancetta Piacentina PDO rolled: a tasty product of the ancient Piacenza cured meats tradition with a savory flavor, aromatic notes and a delicate scent.
A strict regulation, approved by the European Union, controls and protects the production areas, the care for animal welfare and the choice of pigs that must have specific characteristics, as well as processing and maturing methods.
The Pancetta (meaning “Belly”) comes from the sectioning of the belly of heavy Padani pigs coming only from farms in Emilia Romagna and Lombardy.
The so-called “pancettone” is obtained from this specific fatty cut, the squaring and trimming of which gives rise to the actual pancetta.
The minimum aging period of the Pancetta piacentina is 120 days.
