Divine tastings: the Sparkling Blanc de Noirs Classic Method, Cantina Illica
We enter the world of vegan and organic wines, with the tasting of the week that meets the Blanc de Noirs sparkling wine from the Illica winery.
Our reference Sommelier Alessandro Piglucci tells us about it.
The vineyards immersed in the Piacenza hills whose only fences are the surrounding woods and, not using products of animal origin both in the vineyard and in the cellar, can also be defined as vegan.
The main characteristics of the Blanc de Noirs sparkling wine
It is a 100% Barbera wine, with black berried grapes with good acidity and the right body, suitable for making a sparkling wine with the correct longevity.
In fact, the Blanc de Noirs for tasting was aged on the lees for 40 months.
The straw yellow color of this wine amazes for the clear orange reflections given by the same grape stripped of its skin.
On the nose, the terroir, composed of clay and fossil shells, gives strong mineral notes accompanied by hints of berries, orange peel, honey, spices and subtle notes of yeast.
On the palate, the great freshness and strong sapidity make it a crunchy wine but well balanced by a creamy and fine perlage.
Once the glass has been placed, a good persistence is perceived embellished with citrus hints that go well with seafood appetizers and more elaborate dishes of the Piacenza tradition such as tortelli con la coda, a typical Piacenza dish of homemade pasta filled with lean seasoned with butter and sage.
“Il centenario” commemorates the death of Luigi Illica, historic librettist of Puccini and many other composers of the post-Verdi era, whose homonymous winery wanted to honor by intertwining their history with that of their classic method sparkling wines.
