The pairing of a wine almost always concerns the gastronomic field since, sometimes, also the context of the tasting, or the music we are listening to, influences the choice of the bottle, Mossi winery combines the “wines in the showcase” selection with a musical style that depicts the character of the label as for the Sparkling Rosè Semi Croma wine.
Peculiarities
A sparkling wine obtained from Malvasia Rosa (rare mutation of the aromatic Malvasia of Candia) 70% and Pinot Noir 30% leaving the skins in contact with the must just the time necessary for the wine to become a pale pink color.
The exposure of the vineyards to the North-East is suitable for the grapes to be used as sparkling wine as they retain a remarkable freshness which, if exposed to the South, they would lose due to too much irradiation.

The Martinotti method, or that of refermentation in autoclave, better preserves the fruity and floral scents of the wine, in fact delicate notes of damask rose, lychee, berries and green apple come out intensely from the glass.
On the palate the perlage, the freshness and the sapidity coming from the clayey terroir remain balanced and the sparkling rosè “Semi Croma” wine suitable for aperitifs based on traditional Piacenza cured meats such as fresh or raw fish cheeses always accompanied by a pleasant musical background.
