Gallettificio Valtidone contains within it the strength of two farms rooted for some time in the Piacenza area to carry out an ambitious project: transforming corn and buckwheat into simple, genuine and tasty foods in the form of wheat / corn cakes and flours.
The attention starts from the cultivation of raw materials and is maintained in all stages of the supply chain, from sowing to the packaged product, and allows to preserve the fertility of the soil, its biodiversity as well as reduce the consumption of energy used.
The raw materials are processed at the production site to preserve their unique and unrepeatable characteristics as each vintage is different from the others, as well as the taste and aroma of the products.
The sowing takes place in the first days of April and in the field all the raw materials are constantly checked to ensure their high quality. After harvesting, drying and storage takes place followed by the transformation that leads to the finished product ready for marketing. To minimize waste, non-marketable cakes for aesthetic reasons are reused as zootechnical food by neighboring companies.
The artisanal production of cakes and flours is therefore strongly marked by the cycles of nature, allowing to obtain healthy but tasty products.
To allow this, there are hives with bees near the cultivation land to facilitate pollination, for example, of buckwheat, increasing the fertilized flowers and therefore the final grain yield.
