Nowadays it is often discussed to replace the classic white flour with more nutritious and healthy alternatives such as chickpea flour, used since ancient times as it is considered a panacea for body care.
Cheaper than wheat which was a luxury in times of war, it was often used in the preparations of the peoples of the Middle East and today also in the most modern vegan and vegetarian recipes.
The increasing use of this flour is due to the fact that it is rich in proteins, fibers and carbohydrates, with only 6% of “good” fats, as they provide a high nutritional intake especially for the proper functioning of the heart.
It also contains vitamins of groups A, B, E, C and mineral salts useful for the proper functioning of our body.
The benefits of chickpea flour do not end there, in fact it contains calcium, magnesium, phosphorus and potassium which help in countering high blood pressure and muscle fatigue as well as strengthening the brain and bones.
More generally, we know that legumes, with their fibers, help our digestive system and having a low glycemic index are recommended for those suffering from diabetes, for those on a diet and for people with celiac disease, because they do not contain gluten!
