For all of us who work with passion in the agri-food world, the national day against food waste is an important theme that allows us to share the importance of sustainable production for food products and for our culinary excellence.

In fact, food waste also affects the resources used to produce it: water, land and energy, which in sustainable terms are really important to us. So we are always looking for solutions to improve our impact on the planet and therefore, use its resources to the fullest. This ensures that the products can become sustainable throughout the supply chain.
A food product that represents this aspect well and that we want to celebrate today is the sweet and sour vegetable pickle.
An ancient way of preserving vegetables without food waste: the real giardiniera
The Giardiniera is the symbol of the food preservation par excellence, it contains all those values of which our Italian gastronomic history is made. This is how the main conservation methods were born, which are still used today and have become part of our gastronomic and taste heritage.

How to store vegetables
To obtain the best preserves, while keeping the flavors, aromas and fragrances of the vegetables intact, the ideal is to choose seasonal products. In fact, seasonal products are rich in properties and nutritional elements, thus respecting the rhythms of nature and the earth.
Seasonality, in fact, allows to consume – and in this case to preserve – the vegetables when they are at their maximum development and therefore the moment in which it contains the greatest quantities of mineral salts, vitamins and nutrients. This is why we promote the choice of vegetables that nature makes available to us, keeping their goodness intact thanks to conservation and reducing food waste.
This is where our flagship of preserves comes from: the real vegetable gardener produced by Cascina Pizzavacca. Here still today people work with passion to cultivate raw materials in harmony with the earth. The varieties of native fruit and vegetables grown in the field are therefore enhanced. Finally, the simple and genuine recipes of the peasant tradition are proposed.

In fact, in the “Cascina Pizzavacca” estate the best food preserves that nature can offer are produced: from fruit nectars to tomato sauces, passing through jams and marmalades.
An example of production against food waste and respect for the land and its fruits. All this while respecting the seasonality of the products.
